11 Simple Paleo Recipes to Make in a Pinch.

I go through stages of food. I get bored easily, but I really like to make things as easy as possible. I like quick and simple meals that taste amazing, and I can make in a pinch!  For me, having a stockpile of paleo recipes like these is what helps me stay on track with my real food lifestyle.  It doesn’t have to be hard..It just takes a bit of practice and effort in the beginning.

And since everyone loves delicious recipes – I thought I would share my current favorites! I am currently following a paleo lifestyle. But all of these recipes can easily be customized to fit for you and what you have in the kitchen!

Now unto my favorite go-to recipes!!

11 Paleo Recipes to Make in a Pinch.

1. Breakfast –  This isn’t really a recipe, but I wanted to share because its so EASY. My go-to breakfast right now is ham and roasted veggies with avocado. I just slice up as much ham as I wanted and then heat up some veggies. VOILA! If I happen to have a sauce in the fridge, I might pile that on instead of the avocado.

 

2. Scallops – Scallops are spendy but super quick and delicious to make. The key is to cook in grass-fed butter or bacon fat and to NEVER let them overcook. A few minutes on each side is perfect!

3. Dijon Almond Crusted Tilapia – I love this recipe because the sauce is sticky enough to not need eggs to coat the fish. It is also very versatile. You can use ANY nut and any fish! This recipe suggests cooking in a pan which I have done. But if you are lazy like me, I just pop in the oven at 375 degrees. Make sure NOT to overcook. 15 minutes is the max you want to cook any fish in the oven.

4. Golden Milk Salmon – I am all about finding simple AND unique recipes. This one is unique. I have never seen someone create a recipe like this, but it is to die for tasty and creamy. Unfortunately, I cannot eat salmon or coconut right now. ☹ But if you love salmon and want to try something different – put this on your grocery list now!!

5. Cilantro Lime Chicken with Avocado Salsa – Chicken can be boring to eat. I love it, but you need flavor if you want to eat it almost every day! Haha This recipe is a great option to make sure you have lots of flavor and fat to pile on the chicken! Just make sure to have lots of limes and lemons on hand to keep the avocado salsa from browning too quick!

6. Delicata Squash and Super Gyro Sliders – This recipe blew me out of the water good. I cooked this for my mom and my sister over Christmas and they loved it so much!! We ate it twice!! It is so easy and such a different flavor from the normal recipes. My fiancé loved it too – which is a rarity for him to LOVE a meal. This is another creation from primal palate spices. They have this special Gyro blend! You can buy on Amazon if you want to make it to perfection. Otherwise google how to make the spice blend! I cannot guarantee it will be as good though!

7. Blueberry Feta Salad – I love having simple go-to salads. This is seriously one of my favorites. I love bringing to holiday events because it is 1) pretty 2) no one brings healthy salads!! There is just something so perfect about the combo of greens, blueberries, and nuts. Personally, I make this with pecans (but any nut is good). I also like to add avocado, chicken, and/or pomegranate seeds if I want to make it a full meal! It is so easy to throw together so if you are in pinch – so make this salad next!!

8. Curried Cauliflower Kale Soup – Sometimes you just need a veggie packed soup, and this is it. So Healing. So Nourishing. It is made mostly out of cauliflower which makes it super creamy. The flavor is the BEST and you seriously cannot go wrong with it. I love curry. <3 I also love soups because you can cater to what you have in the fridge. I would seriously try this with any kind of veggie! All you need is a food processor to make it smooth!

9. Paleo Shepherd’s Pie – I love me some Shepherd’s pie. It is so versatile and so comforting. Plus it makes a lot of food so you have lots of leftovers. 😊 Personally, I love making mashed rutabaga on top of my pie. Mashed parsnip is also great! To make it delicious, just add a few TBSP of butter with a dash of almond milk and a few sprinkles of garlic!  Traditionally, shepherd’s pie is made with lamb which I LOVE. It is so great for the winter months and so grounding. You can use both lamb or beef though so just pick one and whip it up!

10. Pot Roast in the Crockpot – This recipe is for the Instapot, but I made with a crockpot and it turned out just as good! This recipe is hearty and an easy way to cook a bunch of veggies at the same time! The other day, I made this with parsnips, carrots, and brussel sprouts! The Brussels were SO soft and tender. I loved it! Simple and easy – seriously who doesn’t love that????

11. Sweet Potatoes with Almond Butter – Okay, I HAD to have dessert in here. This is my favorite dessert by far. (I know I am weird) Now that I am on a no-sugar protocol, this is going to be my almost every-day bed-time snack. I make this with either sweet potatoes or butternut squash. And my favorite way to eat is to cover with cinnamon, nut butter, and blueberries. Coconut butter is also divine in this!! It is seriously heavenly and a super nutrient dense dessert. I used to gag eating sweet potatoes. Now I find them as dessert???!? Boy oh boy – WHO AM I ?? Also as I was writing THIS popped in my inbox. *drooling*
