3 Ways to Indulge in Sweet Potato Toast

I hope this posts breaks up your feed between all the nutty election posts. The world isn’t ending so lets get back to real stuff like taking control of our life, living our purpose, and creating the life that we want to live! I am SO thankful everyday for the opportunities that I have to LIVE my life however I choose and living here in America is SUCH a blessing! And to be 100% honest this is something that I forget, but with everything that is going on in the world and in my personal life, it has made me realize that we only have one life. We have the power to create the life that we want. We have the power to feel how we want to feel. The president does NOT have control on how you choose to feel and live out your day. We are FULLY responsible for the life we have at this moment and blaming anyone else for what you have is only giving up that responsiblity. I’ll admit it is easy to be complacent. It is easy to let each day take you by and disappear. It isn’t easy. But the power that you have when you decide that you are going to control what you can, you will feel SO much better. Take your anger, your worry, your fear, and use it set a fire inside of you to take back control of your life and start taking more action. Let the pain inspire you to take action of what you want more of in your life. Maybe this is a wake up call for you, now is time to rise and sometimes we need to be shaken up for real transformation to occur.
In my own life, I need more creativity. It is always put on the back burner, but my soul aches when I don’t create just like my body aches when I eat like crap and don’t move. My addictions come out and I find myself doing things I don’t want to do just to nourish myself from the daily grind. Writing, creating, teaching, sharing, and inspring others is where my purpose comes from and part of that is sharing my own journey and where I am at right now. And this is where I am, learning and understanding that I am made to create and it will always be put on the list last until I take responsilibity for my actions and make it a priority by scheduling it in like I do my workouts. Life is too short to be okay with the status quo, to be complacent and let things just happen to you. So here I am writing this post to inspire you to get moving on what you want more of in your life and tell you about my NEW favorite dinner/snack. SWEET POTATO TOASTS!
I used to practically gag at any sweet potatoes (as they remind me too much of winter squash the only food I cannot eat), but I really wanted to love them because they looked SO good. Eventually, my wish came true and I fell madly in love with them and now I am obsessed! I eat them weekly if not daily!
My FAVE way to cook them is sliced up and toasted in the oven! They are basically like mini-toasts that I can pair with my meal or eat as a snack! They are so simple and easy to make which is another reason I love them! I will admit it – I am lazy when it comes to cooking every single day! Sweet Potatoes take little effort to cook in the oven and toasting cooks them even faster! Who wants to wait an hour for a baked sweet potato?? Who wants to wait that long to eat??? NOT ME!
So if you are like me and want to eat sooner than later… start with pre-heating the oven to 350 degrees. Slice the sweet potato into thin slices. (leave the peel on because who has time for peeling??!?) Lay out on a pan with tin foil(no oil) and toss in the oven. That’s it!! Cook time depends how crispy you want them. If they are thicker slices, it takes a bit longer to cook, but around 20-30 minutes until they are perfect and they could go faster if the oven is hotter or the slices are thinner.
Ok so the toasts are warm and crispy! Now how do you top them?? Well you can eat as is and just add a bit of salt or your favorite sauce! Or you can turn it into a full meal!
Here are my 3 favorite ways to indulge sweet potato toasts!
Sweet Potato Avocado
– This is my favorite! I swear I could eat sweet potatoes and avocado all day everyday.
After toasting the sweet potato, Spread on a little avocado on each toast. Sprinkle on sea salt! Voila!
Sweet Potato BBQ Chicken
This is another simple recipe! I make my own BBQ sauce. {I got the recipe from Fed and Fit book – its so simple and easy!! This recipe is a bit different from the book, but a few more ingredients, just trust me that homemade tastes WAY better}
– Spread on a little bit of BBQ sauce on each slice. Top with shredded chicken and feta cheese. MM – Stick back in the oven to heat through or just heat up the toppings before piling on!
Sweet Potato Canadian Bacon
I love candadian bacon and pineapple. Seriously nothing is better than this combo. Top each toast with a little marinara sauce. Put on some pineapple and chopped up ham. Sprinkle with feta cheese!
